Directions
Step 1
Place the bulgur wheat in a large bowl and pour the boiling water over it. Cover and let it sit for 20 minutes, or until the water is absorbed.
Step 2
Fluff the bulgur wheat with a fork to separate the grains.

Add the chopped cilantro, diced tomatoes, diced cucumber, and sliced green onions to the bulgur wheat.
Step 4
In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.

Pour the dressing over the salad and toss well to combine.
