Step 1
Preheat your oven to 200°C (400°F).
Step 2
Rinse the chicken under cold water and pat dry with paper towels.
Step 3
Juice one lemon and slice the other into rounds.
Step 4
In a small bowl, mix the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper.

Rub the mixture all over the chicken, making sure to get under the skin as well.
Step 6
Place the lemon slices inside the cavity of the chicken along with any remaining herb mixture.
Step 7
Tie the legs together with kitchen twine and tuck the wings under the body.
Step 8
Place the chicken on a roasting pan and roast in the preheated oven for 60-75 minutes, or until the internal temperature reaches 75°C (165°F).
Step 9
Remove from the oven and let rest for 10 minutes before carving.
