Classic Filipino Pork Adobo

Ingredients

  • 3 bay leaves
  • 10 g black peppercorns
  • 15 ml cooking oil
  • 6 cloves garlic
  • 1 onion
  • 1000 g pork belly
  • 120 ml soy sauce
  • 20 g sugar
  • 120 ml vinegar
  • 240 ml water

Directions

Step 1
In a large bowl, combine the pork belly, soy sauce, and garlic. Marinate for at least 30 minutes.
Step 2
Heat the cooking oil in a pot over medium heat. Add the marinated pork and cook until browned.
Step 3
Add the onions and cook until they are translucent.
Step 4
Pour in the vinegar and let it simmer without stirring for about 5 minutes.

Add the water, bay leaves, peppercorns, and sugar. Stir to combine.
Step 6
Bring to a boil, then reduce the heat to low. Cover and simmer for 40 minutes or until the pork is tender.
Step 7
Remove the lid and simmer for an additional 10 minutes to reduce the sauce.
Step 8
Serve hot with steamed rice.
