Preheat the oven to 180°C (350°F).

In a bowl, mix honey, red wine, minced garlic, chopped rosemary, olive oil, salt, and black pepper.

Place the lamb ribs in a baking dish and pour the marinade over them. Ensure the ribs are well coated.

Cover the dish with aluminum foil and let it marinate in the fridge for at least 2 hours, preferably overnight.

Remove the dish from the fridge and let it sit at room temperature for about 30 minutes before cooking.

Bake the ribs in the preheated oven for 1.5 hours, basting occasionally with the marinade.

Remove the foil and increase the oven temperature to 200°C (400°F). Continue roasting for another 20-30 minutes until the ribs are golden brown and caramelized.
