Ingredients

  • 1 bay leaf
  • 0.5 tsp black pepper
  • 15 oz canned diced tomatoes
  • 2 carrots
  • 2 celery stalks
  • 1 cup dried lentils
  • 1 tsp dried thyme
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp salt
  • 2 cups spinach
  • 4 cups vegetable broth

Directions

Step 1
Set the Instant Pot to sauté mode and heat the olive oil.
Step 2
Add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.
Step 3
Add the minced garlic and cook for another 1 minute.
Step 4
Add the rinsed lentils, diced tomatoes, vegetable broth, bay leaf, dried thyme, salt, and black pepper. Stir to combine.
Step 5
Close the lid of the Instant Pot and set the valve to sealing. Cook on high pressure for 15 minutes.
Step 6
Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
Step 7
Open the lid, remove the bay leaf, and stir in the fresh spinach until wilted.
Step 8
Serve hot and enjoy!
