These delightful Empire Biscuits are a traditional treat, featuring jam sandwiched between two buttery biscuits, topped with icing and a cherry. Perfect for tea time or any special occasion.

Step 1
Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
Step 2
In a large bowl, cream together the butter and sugar until light and fluffy.
Step 3
Beat in the egg and vanilla extract until well combined.
Step 4
Gradually add the flour to the mixture, mixing until a dough forms.
Step 5
Roll out the dough on a floured surface to about 5mm thickness.
Step 6
Cut out circles using a cookie cutter and place them on the prepared baking sheet.
Step 7
Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool completely on a wire rack.
Step 8
Spread a small amount of raspberry jam on half of the cookies, then sandwich them with the remaining cookies.
Step 9
Mix the icing sugar with water to create a smooth icing and spread over the top of each sandwiched biscuit.
Step 10
Place a glace cherry in the center of each biscuit and allow the icing to set before serving.
