Ingredients

  • 1 bell pepper
  • 400 grams black beans
  • 0.5 teaspoon black pepper
  • 2 tablespoons chili powder
  • 0.5 cup cilantro
  • 1 teaspoon cumin
  • 800 grams diced tomatoes
  • 3 garlic cloves
  • 400 grams kidney beans
  • 2 tablespoons olive oil
  • 1 onion
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 2 sweet potatoes
  • 500 ml vegetable broth

Directions

Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add diced onion and cook until translucent, about 5 minutes.
Step 3
Stir in minced garlic and cook for another minute.
Step 4
Add cubed sweet potatoes and diced bell pepper to the pot and cook for about 5-7 minutes.

Stir in black beans, kidney beans, diced tomatoes, and vegetable broth.

Add chili powder, cumin, paprika, salt, and black pepper. Stir well to combine.

Bring the mixture to a boil, then reduce the heat and let it simmer for 30-35 minutes or until the sweet potatoes are tender.
