Step 1
Preheat the oven to 250°C (482°F).

Roll out the puff pastry dough and cut it into circles to fit a muffin tin. Line the muffin tin with the pastry circles.

In a saucepan, combine sugar, water, cinnamon stick, and lemon peel. Bring to a boil and let it boil for 3 minutes. Remove from heat and set aside.

In another saucepan, whisk together flour and a little bit of milk to form a paste. Gradually add the remaining milk and cook over medium heat, stirring constantly until thickened.

Remove the cinnamon stick and lemon peel from the sugar syrup. Slowly pour the syrup into the milk mixture, stirring constantly.
Step 6
In a bowl, whisk egg yolks and vanilla extract. Slowly add to the milk mixture, whisking constantly.
Step 7
Pour the custard filling into the pastry-lined muffin tin, filling each about 2/3 full.
Step 8
Bake for 15-20 minutes or until the custard is set and the tops are golden brown.

Allow to cool before serving.
