These homemade fudge stripe cookies are a delicious treat for any occasion. They feature a buttery shortbread base with rich chocolate stripes, perfect for sharing or enjoying with a cup of coffee.

  • 300 g all-purpose flour
  • 1 g salt
  • 170 g semi-sweet chocolate chips
  • 100 g sugar
  • 230 g unsalted butter
  • 5 ml vanilla extract

Directions

Step 1
Preheat oven to 350°F (175°C).
Step 2
In a large bowl, cream together the butter and sugar until light and fluffy.

Mix in the vanilla extract.
Step 4
Gradually add the flour and salt, mixing until combined.
Step 5
Roll out the dough to about 1/4 inch thickness on a floured surface.

Cut out cookies using a round cookie cutter. Use a smaller round cutter to cut out the center of each cookie to form rings.

Place cookies on a baking sheet lined with parchment paper.

Bake for 10-12 minutes, or until the edges are lightly golden.

Allow cookies to cool completely on a wire rack.

Melt the chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.

Dip the bottom of each cookie into the melted chocolate and place on parchment paper to set.

Using a piping bag or a ziplock bag with a small corner cut off, drizzle the remaining melted chocolate over the top of the cookies to create stripes.

Allow the chocolate to set completely before serving.
