  • 250 g all-purpose flour
  • 5 g baking powder
  • 115 g butter
  • 1 egg
  • 1 g salt
  • 200 g sugar
  • 10 ml ube extract
  • 120 g ube halaya (purple yam jam)

Directions

Step 1
Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
Step 2
In a medium bowl, whisk together the flour, baking powder, and salt.
Step 3
In a large bowl, cream together the butter and sugar until light and fluffy.
Step 4
Beat in the egg and ube extract until well combined.
Step 5
Add the ube halaya (purple yam jam) and mix until fully incorporated.
Step 6
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Step 7
Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Step 8
Bake for 12-15 minutes or until the edges are lightly golden.
Step 9
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
