A traditional New York knish with a delicious potato filling wrapped in a crispy dough. Perfect for a savory snack or side dish.

Step 1
Boil the potatoes in salted water until tender. Drain and mash them.
Step 2
In a pan, sauté the onion in butter until golden. Add the onions to the mashed potatoes and mix well. Season with salt and pepper.
Step 3
In a bowl, combine the flour, baking powder, egg, water, and vegetable oil. Knead into a smooth dough.
Step 4
Roll out the dough on a floured surface to about 0.5cm thickness. Cut the dough into squares.
Step 5
Place a spoonful of the potato filling in the center of each square. Fold the corners over the filling and pinch to seal.
Step 6
Preheat oven to 180°C (350°F). Place the knishes on a baking sheet and bake for 25-30 minutes, or until golden brown.
