Step 1
Combine the egg whites, sugar, and salt in a heatproof bowl. Place the bowl over a pot of simmering water ensuring the bowl does not touch the water.
Step 2
Whisk constantly until the sugar has dissolved and the mixture reaches 70°C (160°F).
Step 3
Remove the bowl from heat and continue to whisk until the mixture is glossy and stiff peaks form.
Step 4
Add the vanilla extract and whisk to incorporate.
Step 5
Use immediately or store in an airtight container in the refrigerator for up to 24 hours.
