Ingredients

  • 1 bay leaf
  • 500 ml beef broth
  • 500 g beef stew meat
  • 0.5 tsp black pepper
  • 3 carrots
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 1 onion
  • 150 g peas
  • 4 potatoes
  • 1 tsp salt
  • 1 tsp thyme
  • 2 tbsp tomato paste

Directions

Step 1
Heat olive oil in a large pot over medium heat. Add beef stew meat and cook until browned on all sides.
Step 2
Add chopped onion and minced garlic to the pot. Cook until the onion is translucent.
Step 3
Stir in the carrots and potatoes, and cook for an additional 5 minutes.
Step 4
Pour in the beef broth and add the tomato paste, bay leaf, thyme, salt, and black pepper. Stir well to combine.
Step 5
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 1 hour or until the beef is tender and the vegetables are cooked through.
Step 6
Add the frozen peas and simmer for an additional 10 minutes.
Step 7
Remove the bay leaf before serving. Serve hot and enjoy!
