Preheat your oven to 175°C (350°F).

In a small bowl, combine soy sauce, water, brown sugar, honey, minced garlic, and grated ginger.

Place the chicken thighs in a baking dish and pour the teriyaki sauce over them.

Bake in the preheated oven for 30 minutes, basting the chicken with the sauce occasionally.

In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry.

After 30 minutes, remove the chicken from the oven and pour the cornstarch slurry into the sauce. Stir well.

Return the chicken to the oven and bake for an additional 10 minutes or until the chicken is fully cooked and the sauce has thickened.
