Ingredients

  • 400 ml coconut milk
  • 2 tbsp coriander leaves
  • 1 tsp coriander powder
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 2 garlic cloves
  • 1 tbsp ginger
  • 1 onion
  • 500 g pumpkin
  • 1 tsp salt
  • 2 tomatoes
  • 0.5 tsp turmeric powder
  • 2 tbsp vegetable oil

Directions

Step 1
Heat the vegetable oil in a large pan over medium heat.
Step 2
Add the cumin seeds and let them sizzle for a few seconds until aromatic.
Step 3
Add the chopped onion and sauté until golden brown.
Step 4
Add the minced garlic and grated ginger, and cook for another minute.
Step 5
Stir in the chopped tomatoes and cook until they soften and begin to break down.

Add the coriander powder, turmeric powder, and salt. Mix well.

Add the cubed pumpkin and stir to coat with the spices.
Step 8
Pour in the coconut milk and bring the mixture to a simmer.
Step 9
Cover the pan and let it cook for 20-25 minutes, or until the pumpkin is tender.
Step 10
Stir in the garam masala and chopped coriander leaves. Adjust the salt if needed.

Serve hot with rice or naan bread.
