A classic Scottish dessert, the Clootie Dumpling is a steamed pudding made with dried fruits, spices, and flour. Traditionally wrapped in a cloth (cloot), it's a perfect treat for special occasions.

  • 1 tsp baking soda
  • 225 g beef suet
  • 1 tbsp black treacle
  • 225 g breadcrumbs
  • 175 g brown sugar
  • 1 tsp cinnamon
  • 175 g currants
  • 1 egg
  • 1 tbsp golden syrup
  • 300 ml milk
  • 1 tsp mixed spice
  • 450 g self-raising flour
  • 175 g sultanas

Directions

Step 1
In a large mixing bowl, combine the self-raising flour, shredded beef suet, breadcrumbs, brown sugar, currants, and sultanas.
Step 2
Add the mixed spice, ground cinnamon, and baking soda to the mixture and mix well.
Step 3
Stir in the black treacle and golden syrup.
Step 4
Beat the egg and add it to the mixture along with the milk. Mix until well combined.
Step 5
Lay out a large piece of muslin or a clean cloth and dust it lightly with flour.
Step 6
Spoon the mixture onto the cloth, gathering the edges together and tying it securely with string, leaving room for the dumpling to expand.
Step 7
Place the wrapped dumpling in a large pot of boiling water, ensuring it is fully submerged.
Step 8
Simmer for 3 hours, ensuring the dumpling remains submerged and adding more boiling water if necessary.
Step 9
Carefully remove the dumpling from the pot and allow it to cool slightly before unwrapping.
Step 10
Slice and serve warm or cold, with custard or cream if desired.
