  • 30 g black pepper
  • 15 g garlic powder
  • 50 g kosher salt
  • 60 ml olive oil
  • 15 g onion powder
  • 4.5 kg prime rib roast

Directions

Step 1
Season the prime rib roast generously with kosher salt, black pepper, garlic powder, and onion powder. Rub the seasonings into the meat, ensuring even coverage.
Step 2
Place the seasoned roast on a rack in a roasting pan. Allow it to sit at room temperature for at least 2 hours.
Step 3
Preheat your oven to 120°C (250°F).
Step 4
Roast the prime rib in the preheated oven until it reaches an internal temperature of 50°C (122°F) for medium-rare, approximately 3 to 4 hours.
Step 5
Remove the roast from the oven and let it rest for 30 minutes.
Step 6
Increase the oven temperature to 260°C (500°F).
Step 7
Return the roast to the oven and cook until the exterior is brown and crispy, about 10-15 minutes.
Step 8
Remove the roast from the oven and let it rest for another 15 minutes before carving and serving.
