  • 250 g almonds
  • 2 egg whites
  • 250 g hazelnuts
  • 300 g honey
  • 2 sheets rice paper
  • 500 g sugar
  • 1 tsp vanilla extract
  • 150 ml water

Directions

Step 1
Line a baking dish with one sheet of rice paper.
Step 2
In a saucepan, combine sugar, honey, and water. Heat over medium heat until the mixture reaches 140°C (284°F) using a candy thermometer.
Step 3
While the syrup is heating, beat the egg whites in a separate bowl until they form stiff peaks.
Step 4
Once the syrup reaches the desired temperature, slowly pour it into the egg whites while continuously beating.
Step 5
Continue to beat the mixture until it thickens and becomes glossy.
Step 6
Fold in the almonds, hazelnuts, and vanilla extract until evenly distributed.
Step 7
Pour the mixture into the prepared baking dish and spread it evenly.
Step 8
Cover with the second sheet of rice paper, pressing down gently.
Step 9
Allow the torrone to cool completely before cutting it into pieces.
