This light and fluffy frosting is perfect for topping cakes and cupcakes. It's quick to make and requires only a few simple ingredients.

  • 1 tsp cream of tartar
  • 4 egg whites
  • 400 grams sugar
  • 1 tsp vanilla extract
  • 120 ml water

Directions

Step 1
In a heatproof bowl, combine sugar, water, egg whites, and cream of tartar.
Step 2
Place the bowl over a pot of simmering water, ensuring the bottom of the bowl does not touch the water.
Step 3
Beat the mixture on low speed with an electric mixer until it reaches 160°F and the sugar is dissolved, about 5 minutes.
Step 4
Remove the bowl from the heat. Continue beating on high speed until stiff peaks form, about 5-7 minutes.
Step 5
Add vanilla extract and beat until incorporated.
Step 6
Use immediately to frost your cake or cupcakes.
