Ingredients

  • 0.5 tsp black pepper
  • 2 stalks celery
  • 60 ml dill pickle relish
  • 3 hard-boiled eggs
  • 240 ml mayonnaise
  • 1 onion
  • 1 tsp paprika
  • 900 g potatoes
  • 1 tsp salt
  • 15 ml yellow mustard

Directions

Step 1
Peel and dice the potatoes into bite-sized pieces.
Step 2
Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 10-15 minutes. Drain and let cool.
Step 3
In a large mixing bowl, combine the mayonnaise, yellow mustard, chopped celery, finely chopped onion, chopped hard-boiled eggs, salt, black pepper, and dill pickle relish.
Step 4
Add the cooled potatoes to the mixture and gently stir to combine until the potatoes are well coated.
Step 5
Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld together.
Step 6
Before serving, sprinkle the top with paprika for garnish.
