Ingredients

  • 1 bay leaf
  • 500 ml beef broth
  • 900 grams beef chuck
  • 0.5 teaspoon black pepper
  • 4 carrots
  • 2 celery stalks
  • 2 tablespoons flour
  • 2 garlic cloves
  • 500 ml Guinness beer
  • 2 tablespoons olive oil
  • 1 onion
  • 6 potatoes
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • 2 tablespoons tomato paste

Directions

Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add beef cubes and cook until browned on all sides, then remove and set aside.
Step 3
In the same pot, add onion and garlic, cooking until softened.
Step 4
Stir in flour and cook for 1-2 minutes.
Step 5
Return beef to the pot and add carrots, celery, potatoes, Guinness beer, beef broth, tomato paste, thyme, bay leaf, salt, and pepper.
Step 6
Bring to a boil, then reduce heat to low and simmer for 2 hours, or until beef is tender.
Step 7
Remove bay leaf before serving and enjoy your stew.
