Step 1
Heat olive oil in a large pot over medium heat.

Add beef cubes and cook until browned on all sides, then remove and set aside.

In the same pot, add onion and garlic, cooking until softened.

Stir in flour and cook for 1-2 minutes.

Return beef to the pot and add carrots, celery, potatoes, Guinness beer, beef broth, tomato paste, thyme, bay leaf, salt, and pepper.
