Directions
Step 1
In a large heatproof bowl, whisk together the egg yolks and sugar until the mixture is smooth and pale.
Step 2
Place the bowl over a pot of simmering water (double boiler) and continue to whisk constantly.
Step 3
Gradually add the wine, whisking continuously until the mixture thickens and becomes foamy. This should take about 10 minutes.
Step 4
Once thickened, remove the bowl from the heat and continue to whisk for a few minutes to cool slightly.
Step 5
Serve the sabayon immediately, either on its own or over fresh fruit.
