A delicious homemade sweet zucchini relish perfect for adding a burst of flavor to your dishes. This relish is a great way to use up an abundance of zucchini from your garden.
Directions
Step 1
In a large bowl, combine the zucchini, onion, green bell pepper, and red bell pepper.
Step 2
Sprinkle the salt over the vegetable mixture and let it stand overnight, or at least 6 hours.

Rinse the vegetables thoroughly under cold water and drain well.
Step 4
In a large pot, combine the sugar, apple cider vinegar, celery seed, mustard seed, and turmeric. Bring to a boil over medium heat.

Add the drained vegetables to the pot and return to a boil. Reduce heat and simmer for 30 minutes, stirring occasionally.
Step 6
Ladle the hot relish into sterilized jars, leaving 1/2 inch headspace. Seal the jars and process in a boiling water bath for 10 minutes.
Step 7
Cool the jars and store in a cool, dark place. Allow the relish to sit for at least a week before using to let the flavors meld.
