Directions
Step 1
Soak the tamarind pulp in 250 ml of warm water for 15 minutes.
Step 2
Mash the tamarind to extract the pulp and strain it to remove any fibers and seeds.
Step 3
In a pan, add the tamarind pulp, jaggery, and the remaining 250 ml of water.
Step 4
Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes until it thickens.
Step 5
Add cumin powder, coriander powder, ginger powder, salt, and red chili powder to the mixture.
Step 6
Continue to simmer for another 5 minutes, stirring occasionally.
Step 7
Remove from heat and let it cool completely before storing in an airtight container.
