  • 450 g carrots
  • 1 tsp fresh thyme
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 450 g parsnips
  • 1 tsp salt

Directions

Step 1
Preheat your oven to 200°C (400°F).
Step 2
Peel and cut the carrots and parsnips into sticks.
Step 3
In a large bowl, mix olive oil, honey, thyme, salt, and black pepper.
Step 4
Add the carrots and parsnips to the bowl and toss to coat evenly.
Step 5
Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
Step 6
Roast in the preheated oven for 25-30 minutes, turning halfway through, until the vegetables are tender and caramelized.
