Ingredients

  • 400 g black beans
  • 0.5 tsp black pepper
  • 200 g cheddar cheese
  • 500 ml enchilada sauce
  • 8 flour tortillas
  • 2 garlic cloves
  • 500 g ground beef
  • 1 tbsp olive oil
  • 1 onion
  • 1 tsp salt

Directions

Step 1
Preheat your oven to 180°C (350°F).
Step 2
In a large skillet, heat the olive oil over medium heat.
Step 3
Add the chopped onion and minced garlic, cooking until softened.
Step 4
Add the ground beef, salt, and black pepper, cooking until the beef is browned.
Step 5
Stir in the black beans and 250ml of enchilada sauce, then remove from heat.
Step 6
Lay out the flour tortillas and divide the beef mixture evenly among them.
Step 7
Roll up each tortilla and place them seam-side down in a baking dish.
Step 8
Pour the remaining enchilada sauce over the top of the rolled tortillas.
Step 9
Sprinkle the shredded cheddar cheese evenly over the enchiladas.
Step 10
Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
