  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 100 grams brown sugar
  • 1 egg
  • 200 grams granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 120 grams pumpkin puree
  • 0.5 teaspoon salt
  • 170 grams unsalted butter
  • 1 teaspoon vanilla extract

Directions

Step 1
Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.

In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.

In a large bowl, beat the butter, granulated sugar, and brown sugar together until creamy and fluffy.

Add the pumpkin puree, egg, and vanilla extract to the butter mixture and beat until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
