Ingredients

  • 200 g beef
  • 1 bell pepper
  • 1 carrot
  • 2 cloves garlic
  • 2 green onions
  • 1 onion
  • 2 tbsp sesame oil
  • 1 tbsp sesame seeds
  • 100 g shiitake mushrooms
  • 6 tbsp soy sauce
  • 100 g spinach
  • 2 tbsp sugar
  • 200 g sweet potato glass noodles
  • 2 tbsp vegetable oil

Directions

Step 1
Cook the sweet potato glass noodles according to the package instructions. Drain and set aside.
Step 2
Blanch the spinach in boiling water for 1 minute, then rinse with cold water. Squeeze out excess water and set aside.
Step 3
In a pan, heat 1 tbsp of vegetable oil over medium heat. Add the sliced beef and cook until browned. Remove from the pan and set aside.
Step 4
In the same pan, add the remaining vegetable oil. Add the onion, carrot, bell pepper, and shiitake mushrooms. Stir-fry until the vegetables are tender.
Step 5
Add the cooked noodles to the pan with the vegetables. Add the soy sauce, sugar, garlic, and sesame oil. Stir well to combine.
Step 6
Return the cooked beef and spinach to the pan. Toss everything together until well combined and heated through.
Step 7
Garnish with sesame seeds and chopped green onions before serving.
