  • 30 grams butter
  • 200 grams dark chocolate
  • 4 eggs
  • 250 ml heavy cream
  • 50 grams sugar

Directions

Step 1
Melt the dark chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth and set aside to cool slightly.
Step 2
In a separate bowl, whisk the egg yolks with the sugar until pale and creamy. Gradually add the melted chocolate mixture to the egg yolk mixture and combine well.
Step 3
In another bowl, whip the heavy cream until it forms stiff peaks. Gently fold the whipped cream into the chocolate mixture.
Step 4
In a clean bowl, whisk the egg whites until stiff peaks form. Carefully fold the egg whites into the chocolate mixture, ensuring not to deflate the air in the mixture.
Step 5
Spoon the mousse into serving glasses and refrigerate for at least 2 hours before serving.
