In a large pot, bring the chicken broth to a boil.

Add the chicken thighs and cook until they are no longer pink, about 15 minutes.

Remove the chicken thighs from the pot, shred them using two forks, and set aside.

Add the sliced carrots, celery, ginger, and garlic to the pot. Simmer for 10 minutes until the vegetables are tender.

Meanwhile, soak the glass noodles in warm water for 10 minutes, then drain and set aside.
