Ingredients

  • 2 carrots
  • 2 celery stalks
  • 1500 ml chicken broth
  • 500 g chicken thighs
  • 4 garlic cloves
  • 30 g ginger
  • 200 g glass noodles
  • 3 green onions
  • 5 g pepper
  • 5 g salt
  • 60 ml soy sauce

Directions

Step 1
In a large pot, bring the chicken broth to a boil.
Step 2
Add the chicken thighs and cook until they are no longer pink, about 15 minutes.
Step 3
Remove the chicken thighs from the pot, shred them using two forks, and set aside.
Step 4
Add the sliced carrots, celery, ginger, and garlic to the pot. Simmer for 10 minutes until the vegetables are tender.
Step 5
Meanwhile, soak the glass noodles in warm water for 10 minutes, then drain and set aside.
Step 6
Return the shredded chicken to the pot. Add the soy sauce, salt, and pepper. Stir well.
Step 7
Add the soaked glass noodles and simmer for another 5 minutes until the noodles are tender.
Step 8
Garnish with chopped green onions before serving.
