Step 1
Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.

In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is soft. Drain any excess fat.

Add the taco seasoning to the beef mixture and stir well. Add the drained corn, black beans, and diced tomatoes. Stir to combine and heat through.

In a large bowl, prepare the cornbread mix according to the package instructions, adding the milk and eggs.

Pour half of the cornbread batter into the prepared baking dish. Spread the beef mixture evenly over the cornbread layer. Sprinkle half of the shredded cheddar cheese over the beef mixture.

Pour the remaining cornbread batter over the top, spreading it evenly. Sprinkle the remaining shredded cheddar cheese on top.
