Ingredients

  • 2 cups broccoli florets
  • 1 cup cheddar cheese
  • 2 chicken breasts
  • 2 cups chicken broth
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 0.5 teaspoon pepper
  • 1 cup rice
  • 1 teaspoon salt

Directions

Step 1
Heat olive oil in a large skillet over medium heat.
Step 2
Add diced chicken breasts and cook until no longer pink, about 5-7 minutes.
Step 3
Add minced garlic and cook for another 1-2 minutes until fragrant.
Step 4
Pour in chicken broth and bring to a boil.
Step 5
Stir in rice, reduce heat to low, cover, and simmer for 18-20 minutes or until rice is cooked.
Step 6
Add broccoli florets during the last 5 minutes of cooking.
Step 7
Once rice and broccoli are cooked, stir in shredded cheddar cheese until melted.
Step 8
Season with salt and black pepper to taste. Serve hot.
