Directions
Step 1
In a large pot, heat butter and olive oil over medium heat.

Add the chopped onion, celery, and carrots. Cook until vegetables are tender, about 5 minutes.

Add the minced garlic and cook for another minute.

Stir in the diced potatoes, chicken broth, bay leaf, and dried thyme. Bring to a boil.

Reduce heat to a simmer and cook until potatoes are tender, about 15 minutes.

Add the salmon pieces and cook until the salmon is cooked through, about 5-7 minutes.

Stir in the heavy cream, salt, and black pepper. Cook until the chowder is heated through, about 5 more minutes.
