A fresh and vibrant broccoli pasta salad that's perfect for a light lunch or a side dish. This salad combines the crunch of broccoli with the tenderness of pasta, all coated in a flavorful dressing.

  • 0.5 tsp black pepper
  • 300 g broccoli florets
  • 150 g cherry tomatoes
  • 100 g feta cheese
  • 2 garlic cloves
  • 30 ml lemon juice
  • 60 ml olive oil
  • 200 g pasta
  • 1 red onion
  • 1 tsp salt

Directions

Step 1
Cook the pasta according to the package instructions until al dente. Drain and set aside.
Step 2
Blanch the broccoli florets in boiling water for 2 minutes, then transfer to an ice bath to stop the cooking process. Drain well.
Step 3
In a large mixing bowl, combine the cooked pasta, blanched broccoli, cherry tomatoes, red onion, and feta cheese.
Step 4
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper to make the dressing.
Step 5
Pour the dressing over the pasta salad and toss to coat evenly.
Step 6
Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
