  • 1 can chickpeas
  • 0.5 cup cilantro
  • 1 can coconut milk
  • 1 tsp coriander
  • 1 tsp cumin
  • 2 tbsp curry powder
  • 3 garlic cloves
  • 1 tbsp ginger
  • 2 tbsp olive oil
  • 1 onion
  • 0.5 tsp pepper
  • 1 tsp salt
  • 2 cups spinach
  • 2 sweet potatoes
  • 2 tbsp tomato paste
  • 1 cup vegetable broth

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the diced onion and cook until translucent, about 5 minutes.
Step 3
Stir in the minced garlic and grated ginger, cooking for another 2 minutes.

Add the cubed sweet potatoes, chickpeas, coconut milk, vegetable broth, and tomato paste to the pot.

Mix in the curry powder, ground cumin, ground coriander, salt, and black pepper.

Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, until the sweet potatoes are tender.

Stir in the fresh spinach and cook until wilted, about 2 minutes.
