Preheat your oven to 180°C (350°F).

Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.

Add the ground beef to the skillet and cook until browned. Drain any excess fat.

Stir in the diced tomatoes, black beans, corn kernels, cooked rice, chili powder, cumin, salt, and pepper. Cook for a few more minutes until everything is well combined and heated through.

Stuff each bell pepper with the beef mixture and place them in a baking dish.

Top each stuffed pepper with shredded cheddar cheese.
