Step 1
In a large bowl, combine the mashed potatoes, flour, cheddar cheese, green onions, egg, salt, and black pepper. Mix until well combined.

Heat the vegetable oil in a large skillet over medium heat.
Step 3
Scoop out a small amount of the potato mixture and shape it into a patty. Repeat with the remaining mixture.
Step 4
Place the patties in the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy.

Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.

Serve the potato cakes warm, garnished with additional green onions if desired.
