This Sweet Zucchini Relish is a fantastic way to preserve the abundance of summer zucchini. It’s perfect as a condiment for burgers, hot dogs, sandwiches, and more.
Directions
Step 1
In a large bowl, combine zucchini, onions, red bell pepper, and green bell pepper. Sprinkle with salt and let sit for 2 hours.
Step 2
Rinse the vegetables thoroughly and drain well.
Step 3
In a large pot, combine sugar, white vinegar, celery seed, mustard seed, and turmeric. Bring to a boil.
Step 4
Add the drained vegetables to the pot and bring back to a boil. Reduce heat and simmer for 30 minutes, stirring occasionally.
Step 5
Ladle the hot relish into sterilized jars, leaving 1/2 inch headspace. Secure with lids and process in a boiling water bath for 10 minutes.
Step 6
Allow jars to cool and check seals. Store in a cool, dark place.
