Ingredients

  • 6 bell peppers
  • 0.5 teaspoon black pepper
  • 240 ml cooked rice
  • 400 g diced tomatoes
  • 2 cloves garlic
  • 450 g ground beef
  • 15 ml olive oil
  • 1 onion
  • 15 g parsley
  • 1 teaspoon salt
  • 480 ml tomato sauce

Directions

Step 1
Preheat your oven to 190°C (375°F).
Step 2
Cut the tops off the bell peppers and remove the seeds and membranes inside. Set aside.
Step 3
In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
Step 4
Add the ground beef to the skillet and cook until browned. Drain any excess fat.
Step 5
Stir in the cooked rice, tomato sauce, diced tomatoes, parsley, salt, and black pepper. Cook for a few more minutes until everything is well combined.
Step 6
Stuff each bell pepper with the beef and rice mixture, and place them in a baking dish.
Step 7
Pour a little bit of water into the bottom of the baking dish to help steam the peppers.
Step 8
Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
Step 9
Remove the foil and bake for an additional 15 minutes, until the peppers are tender and the tops are slightly browned.
Step 10
Serve hot and enjoy!
