  • 3 garlic cloves
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 900 g new potatoes
  • 2 tbsp olive oil
  • 2 tbsp parsley
  • 1 tsp salt

Directions

Step 1
Wash the new potatoes thoroughly and cut them into bite-sized pieces.
Step 2
In a large pot, bring water to a boil and add a pinch of salt. Add the potatoes and cook until tender, about 15-20 minutes.
Step 3
While the potatoes are cooking, prepare the dressing. In a small bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, salt, and black pepper. Mix well.

Once the potatoes are cooked, drain them and transfer them to a large mixing bowl.
