Embutido is a Filipino-style meatloaf that's packed with flavors and ingredients like ground pork, raisins, and hard-boiled eggs. It's a festive dish often served during holidays and special occasions.
Directions
Step 1
In a large bowl, combine the ground pork, carrot, red and green bell peppers, onion, raisins, pickle relish, cheddar cheese, breadcrumbs, beaten eggs, salt, and pepper. Mix until well combined.
Step 2
Place a portion of the meat mixture on a sheet of aluminum foil and flatten it out.
Step 3
Arrange the hard-boiled egg quarters and hotdog strips in the center of the meat mixture.
Step 4
Carefully roll the meat mixture with the foil to form a log shape, making sure the filling is secured in the center.
Step 5
Tightly wrap the embutido log with the aluminum foil and seal the edges.
Step 6
Steam the embutido for 1 hour or until fully cooked.
Step 7
Let it cool before unwrapping and slicing into serving portions.
