  • 2 carrots
  • 3 celery stalks
  • 2 pieces chicken breast
  • 6 cups chicken broth
  • 3 garlic cloves
  • 2 tablespoons olive oil
  • 1 onion
  • 2 tablespoons parsley
  • 1 teaspoon salt
  • 1 teaspoon thyme

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the chopped onion and minced garlic to the pot and sauté until fragrant and translucent, about 5 minutes.

Add the sliced carrots and celery to the pot and cook for another 5 minutes.
Step 4
Pour in the chicken broth and add the chicken breasts, salt, black pepper, and thyme.

Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the chicken is cooked through.
