  • 250 ml chicken broth
  • 8 chicken thighs
  • 4 garlic cloves
  • 60 ml lemon juice
  • 1 tbsp lemon zest
  • 80 ml olive oil
  • 2 tsp oregano
  • 1.5 kg potatoes
  • 1 tsp salt

Directions

Step 1
Preheat your oven to 200°C (400°F).

Peel and cut the potatoes into large chunks.
Step 3
In a large mixing bowl, combine olive oil, minced garlic, lemon juice, lemon zest, dried oregano, salt, and black pepper.

Add the chicken thighs and potato chunks to the bowl and toss to coat evenly.

Arrange the chicken and potatoes in a single layer on a large baking tray.

Pour the chicken broth around the potatoes.

Roast in the preheated oven for 45-50 minutes or until the chicken is cooked through and the potatoes are golden and crispy.
