Directions
Step 1
Wash the oranges thoroughly and peel them. Cut the peels into thin strips.
Step 2
Remove the white pith from the oranges and cut the fruit into small pieces, removing any seeds.
Step 3
In a large pot, combine the orange peels, orange pieces, lemon juice, and water. Bring to a boil over medium-high heat.
Step 4
Reduce the heat and simmer for about 1 hour, until the peels are very tender.

Add the sugar to the pot and stir until dissolved. Increase the heat and bring the mixture to a rapid boil. Cook, stirring frequently, until the marmalade reaches the desired consistency (about 15-20 minutes).
Step 6
To test for doneness, place a small amount of marmalade on a chilled plate. If it wrinkles when pushed with your finger, it's ready.
Step 7
Ladle the hot marmalade into sterilized jars, leaving 1/4 inch headspace. Seal jars with lids and process in a boiling water bath for 10 minutes.
