Directions
Step 1
Set the Instant Pot to sauté mode and heat the olive oil and butter.
Step 2
Add the beef sirloin strips and cook until browned on all sides. Remove and set aside.
Step 3
In the same pot, add the diced onion and minced garlic. Sauté until onion is translucent.

Add the sliced mushrooms and cook until they release their moisture and start to brown.

Return the beef to the pot and add the beef broth, Worcestershire sauce, and Dijon mustard. Stir to combine.

Add the egg noodles on top, but do not stir. Just press them down lightly into the liquid.

Close the lid and set the Instant Pot to high pressure for 8 minutes.
Step 8
Once the cooking time is done, perform a quick release of the pressure.
Step 9
Open the lid and stir in the sour cream until well combined.
Step 10
Season with salt and black pepper to taste. Garnish with chopped parsley before serving.
