Warm the milk until it's warm to the touch, about 43°C. In a small bowl, combine the warm milk and yeast and let sit until foamy, about 5 minutes.

Punch down the dough and roll it out into a large rectangle. Layer the cold butter slices over two-thirds of the dough.

Fold the dough into thirds, like a letter, and roll it out again into a large rectangle. Repeat the folding and rolling process three more times.

Wrap the dough in plastic wrap and refrigerate for at least 1 hour or overnight before using it to make cronuts.
