Pat the turkey dry with paper towels.

In a small bowl, mix together kosher salt, black pepper, garlic powder, onion powder, paprika, dried thyme, and dried rosemary.

Rub the salt mixture all over the turkey, including under the skin and inside the cavity.

Place the turkey on a rack set in a rimmed baking sheet. Refrigerate uncovered for at least 24 hours and up to 48 hours.

Preheat the oven to 350°F (175°C).

Rinse the turkey under cold water to remove excess salt, then pat dry with paper towels.

Roast the turkey in the preheated oven until the internal temperature reaches 165°F (74°C), about 2.5 to 3 hours depending on the size of your turkey.

Let the turkey rest for at least 30 minutes before carving.
