Ingredients

  • 0.5 tsp black pepper
  • 2 tbsp butter
  • 1 tsp chili powder
  • 0.5 cups cilantro
  • 4 cups corn kernels
  • 0.5 cups cotija cheese
  • 2 tbsp lime juice
  • 0.5 cups mayonnaise
  • 1 tsp salt

Directions

Step 1
If using fresh or frozen corn, cook the corn kernels in boiling water for about 5 minutes until tender. Drain well.
Step 2
In a large skillet, melt the butter over medium heat. Add the cooked corn kernels and sauté for 2-3 minutes.
Step 3
In a large bowl, combine the corn, mayonnaise, cotija cheese, cilantro, lime juice, chili powder, salt, and black pepper. Mix well.
Step 4
Spoon the mixture into cups and serve immediately. Optionally, garnish with extra cotija cheese, cilantro, and a dash of chili powder.
