Clean the chicken livers and remove any connective tissue.

Melt 50g of the butter in a pan over medium heat and sauté the onion until soft.

Add the garlic and cook for another minute.

Add the chicken livers and cook until they are no longer pink inside, about 10 minutes.

Pour in the brandy and cook for another 2 minutes, allowing the alcohol to evaporate.

Transfer the mixture to a food processor and blend until smooth.

Add the remaining butter and double cream, then blend again until fully incorporated.
Step 8
Season with salt and pepper to taste.

Transfer the pâté to a serving dish and smooth the surface. Refrigerate for at least 2 hours before serving.
