Ingredients

  • 500 g chicken breasts
  • 240 ml coconut milk
  • 4 cloves garlic
  • 1 tsp ginger
  • 30 ml honey
  • 30 ml lime juice
  • 120 g peanut butter
  • 1 tsp red pepper flakes
  • 60 ml soy sauce
  • 2 tbsp vegetable oil

Directions

Step 1
Cut the chicken breasts into thin strips.
Step 2
In a large bowl, mix together the peanut butter, soy sauce, honey, lime juice, garlic, ginger, coconut milk, and red pepper flakes to make the sauce.
Step 3
Heat the vegetable oil in a large skillet over medium heat.
Step 4
Add the chicken strips to the skillet and cook until they are no longer pink, about 5-7 minutes.
Step 5
Pour the peanut sauce over the chicken in the skillet and stir to combine.
Step 6
Continue to cook for another 5-10 minutes, until the sauce has thickened and the chicken is fully cooked.
